ParticipantI have a boat with the original setup.
The sheet comes right off the block on the end of the boom to your hand. My boat has a winch (identical to the ones on the side decks of your boat) mounted on the canted mounting spot on the centerboard trunk where you now have a block. One can wrap the sheet around this winch in heavier winds.
I also have a Harken Hexaratchet block on the end of the boom rather than the simple block you appear to have. This is also helpful in heavier winds.
When coming about with this set up one needs to swivel twards the stern while swapping the tiller extension and sheet between hands. Sounds awkard but works fine with a little practice.

ParticipantI glued two 5 foot strip of oak about 3/4 ” wide and 3/8″ thick to the floor directly below the edges of the seats.
The outboard edgesI left square; the inboard edges are rounded. For storage I bought Snapware plastic bins; which are 19.5″x15.5 “x11″high. They fit under the seats and stay in place due to the 90 degree angle between their bottoms and sides abutting the square outboard edges of the strips–and they are easy to slide in and out.phebejim

ParticipantWhen coming about the helmsperson first stands and then turns toward the stern while swapping the mainsheet and tiller extension between hands. After turning 180 degrees he/she sits on the new windward side of the boat.
At first it seems a bit awkward but people get used to it quite quickly. It is slightly disconcerting to take ones eyes off what’s ahead, if only momentarily.phebejim
ParticipantI trailered my Scot on a Trailex aluminum trailer for 10,000 miles behind a 100hp 1967 Volvo 122s station wagon with no problems. Subsequently I’ve trailered it behind a 2000 Subaru Outback for several thousand mile–again no problems.
The towing capacity of a vehicle is available from the manufacturer. I would rely on that data rather than anecdotes from owners (including mine!)phebejim
ParticipantThe boom was designed to make roller reefing posible. With the main sheet coming from the end of the boom the mainsail could be rolled up on the boom like a window shade. However, when I’ve tried it the resulting sail shape was too full thereby reducing the desired effect of reefing.
I’ve subsequently gone to jiffy reefing.phebejim
ParticipantPhil is right. My boat has the original setup. The mainsheet comes through a ratchet block on the end of the boom. One uses the winch to ease tension on the sheet.
I also think Sandy was right—don’t cleat the mainsheet— both because it should be constantly trimmed and to greatly reduce the chances of capsizing.phebejim

ParticipantI think Flying Scot determined that the port to starboard fiberglass straps were not sufficiently sturdy in rough conditions—the foam came loose. So they advised adding longitudinal straps to the port to starboard ones.
